So let’s see the ingredients and how to do it.
• 1 lb boneless chicken breasts, cube into bite-size pieces
• Olive oil
• 2 cloves garlic, pressed through garlic press
• 1tsp lemon juice
• 1 tsp salt
• Pinch of black pepper
• ½ tsp dried oregano
• ½ tsp ground cumin
• ¼ tsp coriander
• ¼ tsp paprika
• Arugula greens
• Sliced tomatoes
• Spicy Garlic Sauce
-Place the cubed chicken into a medium-sized bowl, and mix in about 2 tsps olive oil; add garlic, and rest of the ingredients up to paprika, and marinate well such that the chicken gets coated.
-Using 4 bamboo skewers, skewer the chicken such that equal portions of meat is on each skewer, and allow the chicken to marinate for 20 minutes, or overnight.
-When ready to grill, place a grill pan over medium-high heat and drizzle in a little oil; once the oil heats, put the chicken skewers into the pan, and cook them for 6-8 minutes, occasionally turning them such that they get cooked on all sides, keep them aside, covered with foil, for about 5-10 minutes; then, remove the chicken cubes from the skewers and set aside.
To assemble all, add a little bit of the Garlic Sauce on the flatbread, then the greens; later add a two slices of tomato, and about one skewer-worth of the lemon chicken; pour over a generous amount of the Garlic Sauce, and fold the sides to form a “wrap”
Ingredients for spicy Garlic Sauce
• ½ cup mayonnaise
• ½ cup sour cream or plain Greek yogurt
• 3 cloves garlic, pressed through garlic press
• 1 tsp tahini
• 2-3 tsps sriracha
• 1 tsp salt
• A pinch of black pepper
• A pinch of cayenne pepper
• ½ tsp lemon juice
-Add all the ingredients to a medium bowl, and mix together until completely smooth and creamy; you can use immediately, or keep covered in the fridge. You can also put in a plastic squeeze bottle, and place any leftovers in the fridge to use for other variation of sandwiches, or as a tasty condiment.
